Peanut Butter Cookies

Ingredients

  • 3/4 cup peanut butter
  • 1/2 cup all-vegetable shortening (Crisco)
  • 1-1/4 cups firmly packed light brown sugar
  • 3 tablespoons milk
  • 1 tablespoon vanilla
  • 1 egg
  • 1-3/4 cups all-purpose flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda

Method

  • Heat oven to 375 degrees F.
  • Mix peanut butter, shortening, brown sugar, milk, and vanilla in a large bowl until well blended. Add egg and continue mixing until just blended.
  • Combine flour, salt, and baking soda and then slowly blend in to peanut butter mixture.
  • Drop heaping teaspoons (about 2 inches apart) on to ungreased baking sheet. Flatten slightly in crisscross pattern with tines of a fork.
  • Bake at 375 degrees F for 7 to 8 minutes or until just beginning to brown. Cool for 2 minutes on baking sheet and then transfer cookies to sheet of foil to cool completely.

Yield: About 3 dozen cookies
