Peanut Butter Cookies
Ingredients
- 3/4 cup peanut butter
- 1/2 cup all-vegetable shortening (Crisco)
- 1-1/4 cups firmly packed light brown sugar
- 3 tablespoons milk
- 1 tablespoon vanilla
- 1 egg
- 1-3/4 cups all-purpose flour
- 3/4 teaspoon salt
- 3/4 teaspoon baking soda
Method
- Heat oven to 375 degrees F.
- Mix peanut butter, shortening, brown sugar, milk, and vanilla in a large bowl until well blended. Add egg and continue mixing until just blended.
- Combine flour, salt, and baking soda and then slowly blend in to peanut butter mixture.
- Drop heaping teaspoons (about 2 inches apart) on to ungreased baking sheet. Flatten slightly in crisscross pattern with tines of a fork.
- Bake at 375 degrees F for 7 to 8 minutes or until just beginning to brown. Cool for 2 minutes on baking sheet and then transfer cookies to sheet of foil to cool completely.
Yield: About 3 dozen cookies
