Mock Duck and Asparagus Stir Fry
Ingredients
- 2 tbsp groundnut oil
- 1 garlic clove, crushed and finely chopped
- 1 tbsp grated ginger
- 1 red chilli, de-seeded and sliced
- 4 dried Chinese mushrooms, soaked in hot water for 20 minutes, drained, sliced, stem discarded
- 190g tinned mock duck, drained
- 100g baby asparagus spears
- 100g French beans
- 2 tbsp oyster sauce
- 1 tbsp fish sauce (nam pla)
- 1 tbsp soft brown sugar
- pinch of ground black pepper (optional)
- dash of toasted sesame oil
Method
1. Heat a wok over high heat and add groundnut oil.
2. Add garlic, ginger, chilli, and mushrooms and stir fry for one minute.
3. Add mock duck and stir fry for less than one minute.
4. Add asparagus and French beans and stir fry for less than one minute.
5. Season with oyster sauce, fish sauce, sugar, black pepper (if using) and sesame oil.
6. Serve with steamed jasmine rice and steamed gai lan and garlic oyster sauce.
