Hamburgers With Tarragon Mayonnaise

Ingredients for hamburgers

  • 1 lb lean ground beef
  • 1 small onion, peeled and grated
  • 4 tbsp prepared fruit pickle or chutney
  • 1 to 2 tbsp freshly chopped parsley
  • salt
  • black pepper
  • vegetable oil (for brushing)

Ingredients for tarragon mayonnaise

  • 7 fl oz prepared mayonnaise
  • 1 to 2 tbsp freshly chopped tarragon
  • salt
  • black pepper
  • juice of one lemon

Method

  • Mix together all ingredients (except oil). With slightly damp hands, shape mixture into four 4-inch patties. Cover and chill for 20 minutes.
  • Meanwhile prepare the tarragon mayonnaise: In a small bowl, mix all ingredients and set aside.
  • Brush each burger with a little oil and cook under a pre-heated, moderate grill or on a prepared barbecue for six to eight minutes on both sides until cooked or until any meat juices run clear.
  • Serve in bread rolls of your choice with the mayonnaise and cabbage and radish slaw.
