Hamburgers With Tarragon Mayonnaise
Ingredients for hamburgers
- 1 lb lean ground beef
- 1 small onion, peeled and grated
- 4 tbsp prepared fruit pickle or chutney
- 1 to 2 tbsp freshly chopped parsley
- salt
- black pepper
- vegetable oil (for brushing)
Ingredients for tarragon mayonnaise
- 7 fl oz prepared mayonnaise
- 1 to 2 tbsp freshly chopped tarragon
- salt
- black pepper
- juice of one lemon
Method
- Mix together all ingredients (except oil). With slightly damp hands, shape mixture into four 4-inch patties. Cover and chill for 20 minutes.
- Meanwhile prepare the tarragon mayonnaise: In a small bowl, mix all ingredients and set aside.
- Brush each burger with a little oil and cook under a pre-heated, moderate grill or on a prepared barbecue for six to eight minutes on both sides until cooked or until any meat juices run clear.
- Serve in bread rolls of your choice with the mayonnaise and cabbage and radish slaw.
